Changes:
- Add portainer-stack.yml for easy Portainer deployment
- Add PORTAINER.md with detailed Portainer instructions
- Update docker-compose.yml to use /opt/homarr storage
- Update .env.example with better comments
- Update README.md with Portainer-first approach
- All persistent data now at /opt/homarr
